Chicken Enchilada Balls

I created this recipe for a Mexican themed reception I catered.

It was the favorite item of the evening!

For the enchilada balls:

1 lb of ground chicken

4 oz cream cheese, softened

1/2 cup pepper jack cheese, shredded

1/2 cup sour cream

1 small can diced chilies

1 package of dry enchilada sauce seasoning mix

1 egg

Bread crumbs

Mix all the igredients together except for the bread crunbs.
Shape into balls and roll in bread crumbs.
Bake at 350 degrees for 40 minutes on a lightly greased baking sheet.

For the dipping sauce:
1/2 cup sour cream
3/4 cup mild enchilada sauce
Mix together and chill for at least 2 hours prior to serving.

Serve the warm chicken enchilada balls with the chilled dipping sauce.
